OUR PROCESS

To us, the journey of creating our tequila is as important as the finished product itself. We take care during each step of our process to ensure we’re using only top quality, organic ingredients, while also being a kind partner to the environment and local community.

Our organic production process involves recapturing all waste and repurposing it to create a nutrient-rich soil supplement for the local farming community.

Step 1

HARVESTING

Our Blue Weber Agave plants are grown organically without chemicals or pesticides and take nearly 8 years to mature. We carefully test the agave plants prior to harvest to measure sugar content.

When the agave is at the pinnacle of sweetness and ready for harvest, Jimadors use a sharp, long-handled tool called a coa to cut the leaves from the agave plant, trimming them very tightly so as to eliminate off-flavors associated with the agave plant spines. This leaves us with the pure heart of the agave plant, called a piña, which can weigh up to 200 pounds.

This attention to detail in the selection and harvest of our agave plants is a priority, setting the foundation for an exceptional tequila.

Step 2

ROASTING

Once harvested, our agave piñas are slow-roasted for approximately 20 hours.

During roasting, bitter extracts are separated and discarded, leaving only a sweet aroma and rich flavor.

This process also converts the carbohydrates of the piñas into fermentable sugars in preparation for the fermentation process.

Step 3

FERMENTATION

Once the cooking process is complete, our piñas are milled and rinsed. The by-product of this milling is a musto, creating a sweet liquid or honey water.

Our craftsmen then add our yeast strain for open-air fermentation. This is a key step, so we ensure the proper time is taken without adding any heat to speed up the process.

The result: a complete, robust fermentation yielding a high quality alcohol using only the simplest natural ingredients, never made with additives.

Step 4

DISTILLATION

Our Master Distiller, Carlos Jurado, has years of experience in creating unmistakably balanced tequila with unmatched aromatic qualities and taste profiles.

Part art, part science, distillation is a critical step in the creation of our award-winning tequila with a purity validated through scientific measure.

Step 5

AGEING

Our aged spirits, including the Reposado and Añejo tequilas, are single-barrel aged in American Bourbon Whiskey barrels to achieve rich amber colors and unique full-bodied flavors with hints of barrel wood.

Our Reposado is aged for 11 months and the Añejo for 24 months to deliver quality liquid perfect for sipping.

Step 6

BOTTLING

All Dulce Vida tequilas are made in small batches. Once ready, all liquid is inspected for any impurities to ensure only the best makes it to our customers. Every cork and label are hand applied with care to ensure we’re delivering only the best to our consumers.
